Salads on a plate are on high rotation right now. Not only do they fit more love on them than bowls but the layering capability is where it's at.
Paint

Bright turmeric or beetroot hummus, your favourite yoghurt, thin slices of tomatoes (like a carpaccio) rubbed with garlic, a green tahini, smashed spiced chickpeas, a bright saffron eggplant relish, blitzed charred red capsicum etc..the possibilities are endless but colour is key.
Scatter

Leaves, roughly diced cucumber, radish or ribboned zucchini, carrot or beetroot. Steamed broccoli, beans or asparagus. Roasted or raw.
Spoon
+
In the gaps spoon your seasoned grains + pulses black rice, tri-colour quinoa, crispy chickpeas etc, massaged or cooked kale.
Dress
+
Squirt or drizzle your dressing.
Sprinkle
+
Chopped olives, capers, goats curd, seeds + nuts
all the herbs!
A good paint job, fresh ingredients + a quality sprinkle will get you everywhere.
