Three Simple Dressing Recipes

LEMON AND MAPLE SYRUP

4 tbsp lemon juice
2 tbsp maple syrup 
1 tbsp finely chopped shallot
½ tsp lemon zest
1½ tsp Dijon mustard (optional)
Salt and pepper
135ml extra virgin olive oil 

Mix all the ingredients, apart from the oil, in a large mixing bowl. Add the oil in a thin drizzle while whisking constantly to get a creamy consistency. Taste, and adjust the seasoning. This will keep in the fridge for up to two weeks - bring to room temperature before using.

Goes with everything.

 

TAHINI PARSLEY DRESSING

150ml tahini
70ml lemon juice
150ml water
1 clove of garlic, crushed
30g flat-leaf parsley (if making by hand, it should be finely chopped)
Salt

To make by hand, thoroughly whisk together the tahini, lemon juice, water and garlic in a bowl - you're aiming for a creamy, smooth texture. If it's too thick, add more water. Stir in the chopped parsley and taste; add salt if needed.
If using a food processor or a blender, put in all the ingredients except the parsley and process until smooth. Add more water if needed. Throw in the parsley and pulse for a second or two. Add salt if needed. This will keep in the fridge for three days.

Goes with everything.

 

SESAME SOY DRESSING

1/2 tsp whole black peppercorns
140ml vegetable oil
10ml sesame oil
120ml Japanese soy sauce
120ml rice vinegar
½ small red onion, finely grated
80g light palm sugar, roughly chopped
50ml water

Using a mortar and pestle, grind the peppercorns to a fine powder transfer to a bowl.

Add the vegetable oil, sesame oil, soy sauce, rice vinegar and  grated onion to bowl and whisk well to combine. Set aside.

Combine the palm sugar with half of the water and bring to the boil in a small pot over a medium-high heat. Cook until the water evaporates and the sugar turns to a light brown caramel, then add the remaining water to stop the sugar from caramelising any further – be careful as it may spatter. Lower the heat and stir gently with a wooden spoon until all the sugar is dissolved, then pour into the bowl with the remaining ingredients.

Allow to cool and whisk well before using.
