Sesame Snow Pea Salad

500gms snow peas raw or steamed
¼ cup sesame oil
¼ cup toasted black and white sesame seeds 
¼ cup thinly sliced shallots
2 tablespoons raw apple cider vinegar
2 teaspoons maple syrup
sea salt
white pepper
In a mixing bowl, combine all ingredients and toss to coat the snow peas in the oil and sesame seeds. Adjust seasoning to taste.
Serve at room temperature or chilled, in an airtight glass container for up to 1 week.
