500gm of blanched yellow french beans
a large handful of fresh rocket leaves
1 tsp of turmeric
juice and zest from one unwaxed lemon
sea salt and black pepper
splash of olive oil
- Heat the oven to 180C. Mix the beans with lemon juice, turmeric, salt, pepper and olive oil in a bowl. Spread them on baking paper and straight in the oven to cook for about 15 – 20 minutes until golden crisp.
- While the beans are still hot, top them with fresh rocket leaves and any fresh herbs you have on hand.
