French Beans with Garlic and Herbs


Serves 4-6

500gms yellow French beans
3 tablespoons olive oil
1 1/2 tablespoons butter
1/2 cup shallots, finely minced
4 cloves of garlic, finely minced
2/3 cup parsley, roughly chopped
2/3 cup basil leaves
1 teaspoon flaked sea salt
1/2 teaspoon freshly cracked white pepper

Bring a large pot of water to boil, cook the beans for 5 minutes, until crisp tender. Immediately blanch the beans in a bowl of ice water to halt the cooking process. Remove and dry the beans. This step can be done a few hours prior to serving.

When you are ready to serve, heat the oil and butter in a large (12 inch) saute pan over a medium heat. Add the shallots and cook, stirring often, for 5 minutes. Add the garlic and cook for another minute, just until the garlic is fragrant. Add the beans, tossing to coat evenly, cook until the beans are heated through, about 3-4 mintues. Remove pan from the heat. Add the parsley, basil leaves, and season with salt and pepper. Toss gently, plate and serve.
