2L vegetable or chicken broth
2 cloves garlic, minced
1 tablespoon freshly grated ginger
half a bunch of seasonal greens
3 cups shredded green cabbage
1 tablespoon sriracha
8oz ramen noodles
4 tablespoons brown miso paste
2 tablespoons toasted sesame seeds
5 finely sliced shallots
1/2 bunch fresh coriander leaves
Bring broth to a boil. Add garlic and ramen noodles, stir and turn down to medium heat for 3 minutes then add spinach, and green cabbage. Add in sriracha and freshly grated ginger. Stir and remove from heat.
Stir in 2 tablespoons of brown miso paste, serve into bowl and top with an egg, fresh coriander, sesame seeds, and chopped green onion. Top with more sriracha!
