Asparagus with Romesco, Rocket & Lentils

500gm asparagus oven roasted with 

2 tablespoons olive oil
juice of 1/2 lemon
3 garlic cloves, finely minced
pepper
sea salt

ROMESCO SAUCE

1 red capsicum charred and peeled
1 red chilli charred and peeled
1 cup cherry tomatoes charred but not peeled
1/2 cup extra virgin olive oil
2 tablespoons aged red wine vinegar or apple cider vinegar
tablespoons toasted almonds
garlic cloves
2 tablespoons smoked paprika
3 tablespoons finely chopped mint and parsley
sea salt 

blend ingredients

2 cups cooked french lentils 

to serve : sliced cherry tomatoes, fresh rocket greens and herbs

Combine all componants and eat!
