Kale, Fennel & Green Apple Salad

1 bunch tuscan kale 
1 large fennel bulb
1 Granny Smith apple
1 1/2 cups of toasted walnuts
about 1/4 cup of freshly shaved Parmigiano Reggiano or similar 

Dressing:
1 small shallot, minced
extra virgin olive oil
apple cider vinegar
sesame oil
sea salt
fresh ground black pepper

finely slice and combine.
