Sweet Potato with Black Beans & Quinoa


Makes about 4 meals.

1/2 Shredded Red Cabbage 
1/2 Cup Cooked Quinoa 
300 grams Roasted Sweet Potato
Sliced Avocado
250 grams Cooked Black Beans 

(how to cook black beans)
1 Clove Garlic, minced
1 Tbsp Olive Oil
Pinch seasalt
1/8 to 1/4 tsp Cayenne Pepper
1/8 tsp Cumin
Cook over medium heat for 5 – 10 minutes

Add a bit of each to a bowl, garnish with lime wedge and herbs, and add dressing.

Avocado Dressing
1/2 Avocado
1 Cup Fresh Herbs
1/2 Cup Plain Yogurt
1 Clove Garlic, minced
Juice of 1/2 Lime
1/2 tsp Sugar
1/2 tsp Seasalt
